Physical Information

Chlorophyllin is a group of closely related water-soluble sodium copper salt, which are semi-synthetic products of chlorophyll. Plants such as nettle, spinach and typical grass are some of the raw materials used in the extraction of chlorophyllin.

The extracts from the plants are stabilized, causing displacement of magnesium from molecule core, and substituting it with copper. This forms a water-soluble colorant known as sodium copper chlorophyllin. Copper chlorophyllin is a permitted food colorant in European Union countries.

The product comes in different forms including powder, liquid, and oil-soluble versions.

Common Uses

The product is mainly used in ice creams, dry beverages mixes, icing, and confectionery. It is also capable of dissolving in solvents such as water.

It is a food colorant that is green extracted from chlorophyll. Sodium copper chlorophyllin is made through saponifying chlorophyll, then coppering the resultant product. This process stabilizes chlorophyll through the addition of copper ion, hence, stabilizing the bright green chlorophyll colorants, thus preventing color degradation.
